3 links Chinese sausage,
diagonally cut slices, lightly browned
1 cup thinly-sliced
red onion
3 cups sliced iceburg
or butter lettuce
1 diced tomato
1 medium cucumber,
sliced
fresh cilantro
Brown sausage slices with medium-high heat, about
3 to 4 minutes. Set aside.
Grind peanuts, garlic, ginger, and sugar using a mortar &
pestle or small bowl food processor until they form a paste-like consistency. Slowly incorporate
the line juice and fish sauce. Set
aside.
Toss together lettuce,
onion, tomato, and cukes in large bowl. Add sausage, cilantro and dressing and
toss lightly. Serve immediately.
