Crust |
5.25 oz flour |
2 oz powdered
sugar |
6 oz unsalted
butter |

Preheat oven
to 325 degrees. Combine flour and sugar in a Kitchen Aid bowl.Use
the paddle attachment to mix. Add butter. Mix on low speed until
mixture gloms together. Remove dough and press into an 8" x
8" pan. Bake crust for 30 - 35 minutes or until golden brown. |

Filling |
3 large eggs |
1.25 cup sugar |
1/2 cup fresh
lemon juice |
25 gms flour |

Decrease
oven temp to 300 degrees. Combine eggs and sugar in a bowl, stir
by hand until smooth. Stir in lemon juice; stir until smooth.Sprinkle
in flour, mix until there are no lumps. Pour lemon filling onto
baked crust. |

Bake about
30 - 35 minutes or until filling has set. Allow cooling for 30
minutes, then slice. Option: dust with powdered sugar. |
